Summer Smoothie Bowl
I love having oats for breakfast, in different forms but Overnight Oatmeal Mugs have always been my favorite. And now I have another favorite- Smoothie bowls!
For the love of everything seasonal and local, I created this Summer smoothie bowl. The goodness of mangoes provides the perfect amount of micronutrients, oats make it fiber-rich, a scoop of Protein X for the protein boost and all this blended with coconut milk gives a dense and silky texture.

Blending the frozen mangoes, protein powder, and oats sans milk first gives a fair idea of how thick the mixture is and how much milk is required. Generally, 1-2 tbsps are enough here! If you like your smoothie to be extra rich, you can throw in a small frozen banana as well.
Tip: And always blend on low, ALWAYS!
This is a great breakfast option because:
-
The heat in summers reduces the appetite for hot food. This Summer Smoothie Bowl is perfect for such days!
-
It drastically cuts down on the time you spend in the kitchen.
-
A smaller portion of this makes a perfect mid-meal/dessert
-
You can go crazy with customization- shredded unsweetened coconut, nut butters, nuts, seeds, chocolate chips and the list is endless!
