Creamy Pumpkin Soup

It has finally started raining and the market is flooded with pumpkins. Just the right time to turn this seasonal vegetable into a comforting rainy season dish. While it rains outside, I decided to whip up a quick one-pot meal:  Pumpkin Soup!

Pumpkins are loaded with Vitamin A, high on water content and great for weight loss. There are a zillion ways to cook them but this Pumpkin Soup has my heart. Or maybe it’s just the weather.

While pumpkins add a little bit of sweetness, the coconut milk makes it creamy and rich in good fats, and the moong bean sprouts add the much-needed crunch and protein. The toasted sesame seeds further add nuttiness to this beautiful dish.

This rainy-day soup requires under 10 ingredients and can be cooked under 30 minutes, in just one pot.

Instructions
  1. In a thick bottomed pan, heat 1 tbsp oil. Once it's hot, throw in some pressed garlic.
  2. Once the raw smell of garlic disappears, add roughly chopped onion. Cook till they are sweaty.
  3. Add in the boiled pumpkin along with the vegetable broth.
  4. Add salt and some chili powder (this is optional).
  5. Mix and cook till the ingredients have mixed properly. Add a pinch of cinnamon.
  6. Once cooked, add some coconut milk. I like my soup creamy but you can simply replace this with some boiled and mashed potatoes as well.
  7. Bring the mixture to a boil and then let it cool.
  8. Once cooled, blend it.
  9. Throw in a handful of moong bean sprouts, along with some toasted sesame seeds.
  10. Sprinkle some black pepper and done!
Recipe Notes

1. If you have difficulty digesting moong bean sprouts, you can steam them a little.

2. You can add any vegetable of your choice- throw in some grated carrots or top with a roasted seasonal vegetable.
